{recipe redux} Grilled Mini Peppers

I'm writing this post on vacation in beautiful Curacao.  There are no grilled mini peppers to be found here, but lots of other grilled food like lobster and shrimp! 

It's Grilling Month on Recipe Redux.  Join us as we celebrate the best that summer grilling has to offer.  

I've been grilling up these easy and delicious mini sweet peppers for the last few months and every time I make them for someone new, they rave about them! There's something irresistible about the perfectly charred edges of these delicious mini bites of sweet pepper. The preparation is so easy and the perfect way to serve up these cute little veggies. If you love roasted peppers, then you will love this dish!

Have you seen these in the store?

Simply place the peppers whole, in a bowl, and toss with olive oil, salt and pepper.  Then, get them ready for the grill!

Once on the grill, cook, turning a few times, until they are slightly charred (the skin should be somewhat soft).  Larger peppers will take a little more time.  My husband will tell you to not walk away from the peppers, as the dripping oil will surely cause a grill fire.  :-)


Serve with crusty Italian bread (my favorite) or as part of a dinner salad.  You can also take them off the grill a little sooner, slice them open, and then stuff with herbed goat cheese for a tasty appetizer.

These peppers would also pair beautifully with any of the other grilled dishes below.

  7. So I TOTALLY would've have expected a "pass" on The Recipe ReDux for a vacay in Curacao! I'm impressed!

    And these look yum. I grilled whole bells all the time, but haven't picked up the mini bells. Gonna have to give them a go, too.
